Title: Papas Arrugadas Wrinkled Potatoes

These are cooked in a disproportionate amount of salt, but don't be put off ~- the potatoes are not at all salty. Papas Arrugadas are made with tiny potatoes (often less than an inch across) that grow on the islands and come in dozens of varieties... They are commonly served as an appetizer, dipped in mojos and accompany just about every main course.

Place the potatoes in a saucepan with abundant water to cover. Add the salt and stir until dissolved. Bring to a boil and cook, partially covered, over a medium-high flame until tender. Drain off the water, leaving the potatoes in the pan, and continue to cook over a low flame, shaking occasionally, until the potatoes are dry and the skin slightly wrinkled, about 10 minutes.
